Due to the weather I decided to try the dry rub that came in the captain's bags from the tournament out on steam grilled burgers indoors. Beef for the admiral and veggie for myself. I also used it on some diced potatoes with onion and garlic in the skillet. Both were excellent, and this was the first time that the Admiral asked me to put more of any kind of spice on something. Usually I have to make two batches, one with about 3 flakes of spices for her and another for me so I can taste what I am putting on it. She is already asking when will I make something on the grill with it.

Fancy way of saying in a frying pan or on a griddle with a metal bowl or cover over the burger.

The Admiral is a nurse and works late twice a week. On those nights I'm "single"... My lazy dinner is a couple of frozen, skinless chicken breasts that I sprinkle some dry rub on both sides (while frozen) I pop them in my preheated George Foreman grill and about 7 to 8 mins later.... dinner ( some frozen green beans in the microwave ( 2 mins) goes nicely with it.)

Also mix some rub to taste in mayo for tuna salad.

If any of you remember "The Toms Ribber" BBQ on Fisher several years ago, that rub was the basis for their ribs. Most of the Ribber City sauces originated at "The Toms Ribber".

Bob, Does Ribber City carry an EXTREMEMLY hot Buffalo Wing sauce?

No,we don't. Michael (the talent in the organization) has made some VERY VERY hot products but they really don't sell. You can start with "Franks Hot Sauce", which is the basis for the "Buffalo" sauce. My son-in-law likes hot stuff and uses "Franks" straight out of the bottle. My "cheater" recipe is to use a small amount of Ranch dressing to thicken the Franks slightly. The inside secret of EXTREMELY hot sauces in general is to just spike your favorite recipe, usually with Jalepeno peppers...seeds included, or with cayenne. We also have a Japelino infused honey which is fairly "warm" and goes well with wings... but an extremely hot buffalo, no.

Thanks for the recipe. I am going to try that. I like to be in tears when I eat wings.

Sean, have you ever tried Caffreys wings with the WOW sauce? I like it mild on the side myself. But when someone gets the WOW on the wings sitting close to me it makes my eyes water...

I like it hot as well. Sean, try adding habanero sauce to the Franks. Franks is a good base and you can work with it to make it as hot as you want.

Sean, have you tried Chuck's Cafe just up the road from your store on Rt.33. It's across from the Acme in that small strip mall on the west side. They've been around for years; pretty good wings & other foods as well tho I've only had the wings from there.

Sean, I agree with BOBJ. Chuck's are my favorite wings in Hamilton. I like thier sauce the best. Tina's has wings that have a little more meat on them, but I don't like their sauce as much.

I have tried Chuck's they are good, but I am looking for a sauce that makes you cry. Probably tough to find nowadays with people looking to sue all the time.

Welll.... If that's what you are looking for.... When Michael makes one of his products, there is a 100% edible by-product that is so hot that he has NEVER found anyone who would taste a second piece. I'll ask if he has any around and you can feed some to your food processor and then add it to you favorite not hot enough sauce :-)

Sean, Tina's is on South Olden Ave. If you are looking for that hot, have you ever tried Cluck U? I've never had theirs, but I've heard that they have about 10 different levels of hot and that the top one is insane. You might want to look into them.

Sean - I'm sorry I didn't see this thread sooner. Let me extol on the virtues of Chuck's wings. I grew up in Mercer County and the original Chuck's wings was on Spring St. in Princeton. I believe they are still there. If you are on Nassau St. turn onto Spring St. at Hamilton Jewelers (hope I don't offend John in mentioning this company as they are not a sponsor) and make your first right on Spring St. Chucks is about 100 feet on the left. The best chucks wings going. Little known fact: Chucks was owned and founded by the menendez brothers. Yes, the Menendez brothers that killed their rich parents. Back in the 80's - the wings there were second to none. It's since been sold to different ownership groups but it's still good. Not as good as back then, but good.
But, in Hamilton - you are not far from the best wing ever made on planet earth and worth the 15 minute drive from your shop. Get onto rt. 95 and head towards Pa. and take the rt. 31 exit North. Go approx. 3 miles to the circle and bare right off the circle and make an immediate right into Wildflowers restaurant. There is a Wildflowers in Robbinsville, closer to your shop but I have never tried their wings. Anyway, the wings at Wildflowers in Pennington are the best I've ever had. They are cooked in Sam Adams boston lager and a special hot sauce and you'll never have anything like them. Incredible !!!! I miss that place.

Hey Brian. We both may like Garbage fish, but we have totally different taste in wings!

I have had them at Wildflowers. Now I don't know if the actual wing was good or not, but they cam out with barely any sauce, so I asked for some more, any they brought it out on a small container and charged me for it.

Maybe it was a bad day there or the chef was on vacation. I am going to give them another try.

We tried the coffee chipotle rub the other night...it was really good. I did a fillet for the Admiral and veggie burger for me with it. I topped the burger with a little of the Kansas City style sauce...might just be my new favorite combo for veggie burgers this summer.

Thanks for the feedback...! My personal favorite general purpose sauce is the "Sweet Heat", which is the "Kansas City" sauce with a bit of Chipotle to "warm it up"... not hot but definitely has some heat. Glad you and the Admiral enjoyed it.

Joe,
I talked to Michael (the talent) and he says he is still working on the peanuts and expects some samples soon. Not only has he been tweaking the flavor, but there has been some issues with getting the seasoning to stick and not settle out without going to "additives" that he wants very much to avoid.

Also... he is working on a "super hot" sauce product.

Can't wait. I tried the dry rub on popcorn last night...that was different...and really good.
