Ok Brian I am a believer!!! Fried a bunch up tonight...yum. How about receipe for those tacos, and skate sushi rolls.

Hey Swampy....nice to see you cross over! I am not sure how he marianted the skates, but we fried it up in some olive oil, and put it on a tortilla shell with some homemade salsa, cheese, lettuce and hot sauce. They were great.
No marinade at all on the skate. For tacos, I just cut it up in pieces, and dredged it in a flour mixture.
1 cup of flour
garlic powder and season salt to taste. don't scimp in the garlic powder.
salsa:
chop up tomatoes, cilantro and onions.
fill a tortilla shell with fried fish, then top with shredded cheddar or your favorite cheese, salsa, shredded lettuce and slam it with hot sauce.
