Paul, mount the legs on the outside of that and use a brick to support the charcoal tray. This way when you need to add or check it you lift the whole smoker off and none of the heat escapes. Also mount a better thermometer lower near the racks and add a fire rope to tighten up the cover. I did these mods to mine and works 10X better now.

Yes Loanfish, this is the only way I'll eat bluefish...and thanks Dan..I'll do that...I use an infrared thermometer to check the temp...I don't trust that flimsy gauge...

Me too. Had it last year and loved it. I have a smaller smoker but have never used it. I may have to pick your brain a little. I know those blues will be hitting spoons in a few weeks and would love to smoke them

They're hitting mullet in the surf now...don't wait & don't waste your time with the metal - those yellow eyed Devils want meat! Pick up some mullet rigs and go get 'em!

An old friend and fellow mate of mine gave me his bluefish brine recipe...

1st thing you do is open a beer & drink it down...then mix 1/2 cup of dark brown sugar with 1/2 cup of molasses (or honey if mollasses is not available) in 1 cup of hot water and have a 2nd beer while whisking - add 2 tbsp's of sea salt and 1 tbsp freshly ground pepper - open 3rd beer & drink it down - add 1 cup of cold water and whisk it up real good while having a 4th beer...this will be enough brine for 7 - 10 #''s of fillets which fits into 2 large ziplock bags while you polish off a 5th beer. Finish off the six pack and soak fillets in brine for 24 hours then fire up your smoker and have another 6 pack ready while waiting for the fillets to flake apart...takes around 3-4 hours to smoke 7 - 10 #'s of fish @ 140 - 160 degrees so you may need more beer!

I use a mesquite and hickory mix. I've just started using Apple wood chips today while smoking my last batch of fillets today while downing my 4th beer!!! LOL...
